Bread Pudding (Low Carb)

Keto Friendly Bread Pudding

New Orleans is known for it’s incredible food, but my personal favourites are the desserts. Bread pudding is NOLA staple and it’s the first temptress to make me cheat on my Keto diet. It taste like a mix between banana bread and Cinnabon. I knew as soon as I tried it that I NEEDED to make a low carb version at home. So here is my Keto-friendly Bread Pudding recipe.

Net Carbs: 18g for the whole cake (makes about 4-5 servings so 4.5g per serving)

1. Pre Heat Oven to 350 degrees celsius
2.Stack 5-6 slices of bred and cut into squares of 4
3. Stack slices in bread pan (see above pic for size) -grease pan or line with tinfoil before use
4.Melt butter and pour on bread to soak in
5.Beat eggs with coconut milk, cinnamon, skinny syrup (you could use stevia instead but I always favour skinny syrup’s taste), and vanilla extract
6.Pour mixture into bread pan and add cocoa nibs for extra flavour and fibre!:) If you aren’t doing keto you can use skor nibs or regular chocolate
7.Bake in oven for 45 mins
8.Take out and let cool for 2 mins. Cut and serve with coco whip, icing sugar, sugar free syrup or any other toppings you wish! **Traditional bread pudding is served with rum sauce which you could try with a littke extra prep time.
